Bitterness: 28 IBU
OG: 1.082 FG: 1.020
Alcohol: 8.0% v/v (6.3% w/w)
Water: 1 oz gypsum and 1 tsp Burton salt prior to mash and 1 oz gypsum prior to boil
Grain: 7 lb. American 2-row
1 lb. White wheat malt
1 lb. Munich malt
1 lb. American crystal 10L
8 oz. Dextrine malt (Cara-Pils)
8 oz. Flaked barley
Mash: 69% efficiency
-Prepare 4 gal of water for Mash (check ph level). Cover the mash and hold temperature at 150°-158°F for 60 min
-Prepare 2 gal of sparge water during last 45 min of mash (check ph level). Heat to 160°-170°F.
- After starch conversion (60 min), raise temperature of mash to 160°-170°F and hold for 10-15 min
- Recirculate grain and pour sparge water over it.
Boil: 60 minutes SG 1.107 5 gallons
6.5 lb. Extra pale liquid malt extract
6.5 oz. Corn sugar for priming
- Add 1 tsp Irish Moss last 15 min of boil
- Continually add water to boil (keeping boil volume at 5 gal) throughout to keep steady Hop Utilization
- I don't have a brew pot big enough for entire 6.5 gal boil so I add required amount of sterile bottled water to reach 6.5 gal final volume. If you don't use this method you will have to reassess your Hop schedule due to different utilizations
Hops: .5 oz. Northern Brewer (8% AA, 60 min.)
.5 oz. Perle (7.7% AA, 60 min.)
.5 oz. Northern Brewer (8% AA, 30 min.)
.5 oz. Perle (7.7% AA, 30 min.)
.5 oz. Cascade (5.8% AA, 15 min.)
.5 oz. Spalt (5% AA, 15 min.)
.5 oz. Cascade (5.8% AA, 5 min.)
.5 oz. Spalt (5% AA, 5 min.)
Yeast: Wyeast 1335 British Ale Yeast II. Typical of British and Canadian ale fermentation profile with good flocculating and malty flavor characteristics, crisp finish, clean, fairly dry. Flocculation - high; apparent attenuation 73-76%. (63-75° F, 17-24° C)
Log: Primary— 5-7 days
secondary-- add 4oz oak ckips to secondary and dry hop 1 oz cascade 21 days--add ¼ cup brown sugar and ferment another 7 days
Bottle--3 weeks
Carbonation: 2.8 volumes Corn Sugar: 6.61 oz. for 6.5 gallons @ 65°F
