Water: Arrowhead Mtn. Spring Water as base. 4g/5G Gypsum. 2g/5G Epsom. .25g/5G NaCL.
Grain: 9 lb. 2-row Pale Ale American/Canadian
5 lb. German Wheat malt
1 lb. German Vienna
1 lb. German Munich
1 lb. Carawheat
1 lb. Briess (Cara-Pils)
Mash: 73% efficiency
Mash in at just over 1qt. per lb. grain. Strike temp of 167F. Initial Mash temp of 154F. Mash for 90min. Small amount of hops added to Sparge water in a mesh bag. Small amount of hops added a mash cap prior to sparge.
Boil: 90 minutes SG 1.037 13 gallons
1/2 tsp. per 5G Irish Moss added at 30 Min.
Hops: .25 oz. Warrior (13% AA, 60 min.)
.25 oz. Warrior (13% AA, 30 min.)
.25 oz. Newport (9.8% AA, 30 min.)
.5 oz. Warrior (13% AA, 20 min.)
.5 oz. Newport (9.8% AA, 20 min.)
.5 oz. Warrior (13% AA, 10 min.)
.5 oz. Newport (9.8% AA, 10 min.)
.5 oz. Warrior (aroma)
.5 oz. Newport (aroma)
Yeast: 1 vial per 5G White Labs Pitchable California Ale Yeast #1. Pitched at approx. 85F.
Log: Brewed on 7/15/06. About 85F outside and sunny. Primary for 1 week at 70F. Secondary for 2 weeks, slowly bringing temp down to 55F.
Carbonation: Kegged and force carbonated to approx 2Vols.
