Sierra Clone. Be sure to adjust boil times for AA% of Hops

Type: All grain Size: 5.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 37 IBU
OG: 1.055 FG: 1.014
Alcohol: 5.3% v/v (4.1% w/w)
Water: Boil water 10 minutes to remove chemical, etc. Cool overnight or to mash in temp.
Grain: 9 lb. 8 oz. American 2-row
1 lb. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Mash in at 128 degrees, rest 30 minutes
90 Minutes at 155 degrees
Sparge 170 degrees 20 minutes
Boil: 90 minutes SG 1.063 4.8 gallons
1 tsp. Irish Moss, Boil last 15 minutes
Hops: 1 oz. Cascade (6% AA, 90 min.)
.5 oz. Cascade (6% AA, 45 min.)
1 oz. Perle (8% AA, 15 min.)
1 oz. Perle (aroma)
Yeast: Wyeast 1056
Pitch when wort is cooled to 38 - 72 degrees
Log: Ferment 5 days 68 - 72 degrees
Secondary Fermentation 7 Days 68 - 72 degrees
Carbonation: 2.3 to 2.8 volumes.
Force carbonate at 12 lb for 2 days at 40 degrees.
Add 3/4 cup corn sugar to prime for bottling or keg conditioning
Tasting: Condition approx. 30 days in bottles
Kegging condition a couple of weeks and force carbonate.
