Ponderosa Pale

Classic Pale Ale. Very similiar to Deschutes Mirror Pond.

Type: All grain Size: 6 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 38 IBU
OG: 1.046 FG: 1.010
Alcohol: 4.6% v/v (3.6% w/w)
Water: Gypsum at start of boil. Irish Moss at end of boil.
Grain: 8 lb. American 2-row
2 lb. American crystal 20L
Mash: 75% efficiency
Mash grains for up to one hour at 154 degrees.
Boil: 75 minutes SG 1.039 7 gallons
Add Irish Moss about ten minutes before end of boil.
Hops: 1.75 oz. Cascade (6% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast American 1056.
Log: Brewing Date 6/1/05, Fermentation temperature 68 degrees. Ferment in primary for 7 days and secondary for 7 days. You may dry hop with about 1/2 ounce in the secondary for added aroma.
Carbonation: 2.2 volumes Keg: 10.0 psi @ 42°F
After carbonating, you might consider backing off the 7 pounds of pressure.
Tasting: Excellent pale ale - very base stock for any homebrewer.
