Fish Hook Blonde Ale

A blonde ale for the summer.

Type: All grain Size: 5.25 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 20 IBU
OG: 1.048 FG: 1.011
Alcohol: 4.8% v/v (3.8% w/w)
Water: Nada.
Grain: 6 lb. 8 oz. American 2-row
1 lb. Wheat malt
8 oz. Dextrine malt (Cara-Pils)
8 oz. CaraHell
Mash: 81% efficiency
Multi-step infusion mash.
Protein rest at 122° for 30 min.
Conversion rest at 152° for 60 min or until iodine test shows conversion complete.
Mash out at 168° for 10 min.
Batch sparge at 170° to get 6.5 wort
Boil: 60 minutes SG 1.039 6.5 gallons
Bring to boil and start hop schedule.

Add teaspoon irish moss with 15 min. to go.
Hops: .75 oz. Willamette (5% AA, 60 min.)
.5 oz. Mt. Hood (4.5% AA, 15 min.)
.25 oz. Willamette (5% AA, 15 min.)
.5 oz. Liberty (aroma)
Yeast: WLP011 European Ale bumped up to a 1 pint starter.
Aerate the hell out of the wort and pitch at 70°
Fermentation kicked off 2 hours later.
Log: Primary fermentation for 7 days at 68°
Secondary fermentation for 7 days at 68°
Carbonation: 2.2 volumes Corn Sugar: 3.65 oz. for 5.25 gallons @ 65°F
Tasting: Nice clean flavor (WLP011 is neutral yeast) with good malt character. Just enough hops to keep it interesting and balanced (I like using Willamette as bittering hops in lightly hopped beers.) This recipe is a keeper, wouldn't change a thing. This would be a good Kolsch recipe, just substitute the American hops with German varieties and cold condition after fermentation.
