A not so bitter blonde.

Type: Partial mash Size: 5 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 21 IBU
OG: 1.057 FG: 1.011
Alcohol: 6.0% v/v (4.7% w/w)
Water: Partial mash/boil used Tucson tap water.
Bottled water for addition to 5 gallons.
Grain: 3.5 lb. American 2-row
1 lb. American Vienna
1 lb. American crystal 20L
0.5 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
Add grains to 1.5 gal. water at 153° for 90 minutes.
Sparge with 2 gal water at 173°.
Boil: 60 minutes SG 1.082 3.5 gallons
3 lb. Light dry malt extract
2 tsp. Irish moss last 20 minutes of boil.
Hops: 1 oz. Cascade (5% AA, 60 min.)
1 oz. Cascade (5% AA, 15 min.)
Yeast: Cultivated yeast from a Sierra Nevada Pale Ale in a 1 quart starter.
Can also use Wyeast 1056, or American Ale/California Ale yeast.
Log: Primary fermentation 1 week at 69-72°F.
Rack to secondary 2 weeks at 69-72°F.
Carbonation: Priming with corn sugar.
Tasting: A bitter sweet beer, but not to sweet. Can try Willamette hops for a subtle aroma and reduce Crystal malt by 0.5 Lbs.
