Pale Ale

Beer: Pale Ale Style: American Pale Ale

2 HCU (~3 SRM)
Bitterness: 33 IBU
OG: 1.053 FG: 1.012
Alcohol: 5.3% v/v (4.2% w/w)
Water: Water was drawn the night before and allowed to gas off.
Grain: 18 lb. German Pilsner
Mash: 93% efficiency
Dough in and temp stablized around 55 C°. Pull 1st decocotion (about 1/3 of the total mash vol) Heat decoction slowly to a boil and proceed boiling for 30 min. Return to mash temp stablized at around 65C°. Pull 2nd decoction (about 15% of mash) bring to a boil and then thrown back in to the mash. Temp stablized around 75C°. Mash took about 3 hours total. Recirculate mash till it runs clear and start collection. The 2 decoctions definitely added some more color to the beer
Boil: 75 minutes SG 1.049 13 gallons
Irish moss added at around 15 minutes to knockout.
Hops: 4 oz. Liberty (4.0% AA, 60 min.)
2 oz. Liberty (4.0% AA, 20 min.)
3 oz. Liberty (aroma)
Yeast: 1200 ml of Elm City Ale yeast. Also gave the wort a good shot of pure O2 after chilling. Active fermentation was observed 4-5 hours after pitching.
