Grain: 17 lb. American 2-row
3 lb. Wheat malt
1 lb. American crystal 75L
2 lb. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Mash in at 114° with 4.50 gal water @128F.
Rest 20 minutes and then add 2.75 gal Boiling water,
raising the mash temp to 146F.
Rest 40 minutes and then recirculate and ramp up to 158.
Strike out at 168° Total mash time: 80 min?

Boil: 75 minutes SG 1.049 13 gallons
First wort hop with 2 oz perle (~6% AA?)
Add 1T Irish Moss at 30 min
Hops: 2 oz. Perle (6.25% AA, 75 min.)
1 oz. Cascade (5.5% AA, 20 min.)
1 oz. Cascade (5.5% AA, 15 min.)
1 oz. Cascade (5.5% AA, 10 min.)
1 oz. Cascade (aroma)
Yeast: 1 vial White Labs CA Ale
pitch to starter ~ 40 hrs before.
Carbonation: 2.6 volumes Keg: 12.3 psi @ 38°F
