Victory Ale

My first 5-Gallon batch. Funny this went just as fast as my previous 2.5 gallon batches! The quality took an extreme upturn, producing a very balanced, very clear, red pale ale. I got some belgian lace with this one!

Type: Extract w/grain Size: 5 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 10 IBU
OG: 1.062 FG: 1.012
Alcohol: 6.5% v/v (5.1% w/w)
Water: Straight up unfiltered Philly tap water. Might as well have the original taste of the hometown in it!
Grain: 1.0 lb. carapils
Steep: steep 1 lbs. Carapils in 1 1/2 gallons of water.
Boil: 60 minutes SG 1.207 1.5 gallons
7.07 lb. Light malt extract
1.08 lb. Light dry malt extract
Hops: 1.72 oz. Fuggles (4.75% AA, 60 min.)
0.57 oz. Saaz (4% AA, 60 min.)
1 oz. Saaz (aroma)
Yeast: I used Nottingham Ale Yeast and re-hydrated and started it in with a teaspoon of dextrose.
Log: The brew date on this batch was 09/13/01 and fermented at a pretty steady temp of 78F. I racked this to a 6 gal. carbouy to clear on 09/17, after active fermentation was complete. I let it clear for 3 days and then bottled. It greatly reduced the amount of sediment in the bottles and awarded my effort with a crystal clear ale.
Carbonation: Used 3/4 cup dextrose in 1 cup of boiled water.
Tasting: Really nice balance and efforvecence, yet with a smooth creamy head. A nice year-round drinking beer. I might experiment with other types of hops, since Saaz is not traditionally an ale hops, but that may be why it turned out as it did.
