cascade pale ale

Brewing an extract version of my all time favorite all-grain brew.

Type: Extract w/grain Size: 6 gallons
Color:
24 HCU (~13 SRM)
Bitterness: 68 IBU
OG: 1.057 FG: 1.012
Alcohol: 5.8% v/v (4.5% w/w)
Water: City tap water in Longmont, Colorado, triple particle filtered, with final stage 1 micron carbon block.
Grain: 1.5 lb. American crystal 60L
Steep: water treated with 1 heaping teaspoon gypsum (calcium sulfate.)grains crushed and steeped in grain bag placed in 4 gallons water at 120°F, then brought up to 158°F to steep for 1 hour, stirring regularly. grain bag removed and flushed, with flush water added into boil
Boil: 60 minutes SG 1.076 4.5 gallons
8.5 lb. Light malt extract
Hops: 2 oz. Cascade (6.3% AA, 60 min.)
3 oz. Cascade (6.3% AA, 30 min.)
2 oz. Cascade (aroma)
Yeast: California ale yeast, started in 1 quart of wort with 1/4 teaspoon yeast nutrient boiled with large spoonful of light malt extract, no gravity check, starter made 24 hours before brewing. airlock bubbled well all day, smells like yeast! slowing down significantly by brew time.
