1 lb. Wheat malt
1 lb. American Vienna
1 lb. American Munich
6 oz. Belgian Special B
6 oz. American chocolate
2 lb. Flaked rye
Mash: 60% efficiency
122 degree protein rest 30 minutes. 153 degree mash 90 minutes mash out 170 degrees to produce 7 gallons liquid
Boil: 60 minutes SG 1.043 7 gallons
Irish Moss and yeast nutrient 15 min before end of brew, along with cascades hops Boil til liquid reduced to 5 gallons.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Cascade (6% AA, 15 min.)
Yeast: Wyyeast Irish liquuid yeast starter culture (2 pints. Additional 2 pints of starter media added to starter 3 days into fermentation.
Log: Rack after 7 days. Secondary 4 weeks. Keg, force carbonate
Carbonation: Force carbonate
