Rincon Red Ale

24 HCU (~13 SRM)
Bitterness: 48 IBU
OG: 1.053 FG: 1.012
Alcohol: 5.2% v/v (4.1% w/w)
Water: Used 100% well water, no distilled.
Grain: 1 lb. American crystal 60L
1 oz. Roasted barley
Steep: Added Grains in bag to 5.5 gallons of cold water and very slowly over about 40 minutes, brought it to 180f. Removed grains and turned off heat before adding LME.
Boil: 60 minutes SG 1.056 5.5 gallons
8 lb. Light malt extract
Irish Moss @ 15 minutes
Hops: 1.5 oz. Centennial (10.5% AA, 60 min.)
1.5 oz. Centennial (10.5% AA, 5 min.)
1 oz. Cascade (6% AA, 1 min.)
Yeast: Fermentis Safale US-05 Dry Yeast - 11.5g - Fresh pack
Also added one vial of White Labs American Ales Yeast that was way past its prime.
