Marc-ee-Poo's Irish Red Honey Ale

I added 2.5lbs of honey at the begining of the boil so the sugars would break down for faster fermintation. I added last 1/2# of honey in the last 10 min to retain more smell and honey flavor.

I used leaf hops. After boil down it was 5.25 G and a final Gravity of 1.083.

Bitterness: 20 IBU
OG: 1.083 FG: 1.018
Alcohol: 8.4% v/v (6.6% w/w)
Grain: 8 oz. American victory
8 oz. Belgian aromatic
2 lb. American crystal 40L
2 oz. Roasted barley
Steep: Steeped grains in a bag in about 2.5G of water slowly taking it to 155deg and leaving for 1 hour. I then added to my Big pot and added water from my Hard water tap to make 6.5G
Boil: 60 minutes SG 1.067 6.5 gallons
6 lb. Light malt extract
3 lb. Honey
1 lb. Light dry malt extract
I used Irish moss about 1 Tbsp at 10 min left in boil
Hops: 1 oz. Willamette (4.9% AA, 60 min.)
1 oz. Willamette (4.9% AA, 10 min.)
1 oz. Cascade (7.3% AA, 1 min.)
Yeast: I uses Wyeast 1084 smack pack yeast
