Limelight Ale

Lime added after boil for a bit of a citrus flavor.

Beer: Limelight Ale Style: American Amber Ale
Type: Extract w/grain Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 27 IBU
OG: 1.053 FG: 1.010
Alcohol: 5.5% v/v (4.3% w/w)
Water: Slightly hard well water
Grain: 8 oz. American crystal 40L
Steep: 30 minutes @ 155 - 160
Boil: 60 minutes SG 1.088 3 gallons
3 lb. Munton Light DME
3.3 lb. Light malt extract
1 tsp Irish Moss @ 45 mins into boil
At the end of the boil, add the juice of 4 fresh limes,
Hops: 1 oz. Perle (6.7% AA, 60 min.)
.5 oz. Perle (6.7% AA, 30 min.)
.5 oz. Perle (6.7% AA, 15 min.)
1 oz. Northern Brewer (aroma)
Yeast: 2 packets Coopers dry yeast
Log: Add the 1 oz of Northern Brewers pellets to the fermenter after 24 - 48 hours
Carbonation: Force carbonate in the keg at 15psi then drop to 10psi for serving.
