Grain: 1.00 lb. American Munich
1.00 lb. American crystal 20L
1.00 lb. Dextrine malt (Cara-Pils)
2.00 oz. American chocolate
Steep: Steep in 2 Gal. at 158F for 1 hour
Boil: 60 minutes SG 1.049 3.5 gallons
3.50 lb. Extra Light malt extract
1/4 teaspoon Irish Moss rehydrated for >1 hour, added in last 15 minutes of boil.
Hops: 0.50 oz. Cascade (6% AA, 45 min.)
0.50 oz. Cascade (6% AA, 30 min.)
0.50 oz. Fuggles (4.75% AA, 30 min.)
0.25 oz. Cascade (6% AA, 15 min.)
0.25 oz. Fuggles (4.75% AA, 15 min.)
0.25 oz. Cascade (aroma)

Yeast: White Labs C.A. Ale
Log: Ferment at 68F for 6 days, rack to secondary for 12 more days, to convert to NA heat to 181F for 90 minutes, adding aroma hops in last 5 minutes then add boiled water to make up lost volume, pitch 1 cup yeast slurry from primary and let settle 24 hours. Prime, bottle and condition for 2 weeks at 65F - 70F
Carbonation: Boil 5oz. corn sugar in 1 pint water for 5 minutes.
