Bitterness: 37 IBU
OG: 1.076 FG: 1.012
Alcohol: 8.3% v/v (6.5% w/w)
Water: Spring Water
Grain: 4 lb. American 2-row
1 lb. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
Mash: 40% efficiency
155F for 60 minutes, sparge with 2 gallons 160F and remove grains
Boil: 90 minutes SG 1.095 4 gallons
8 lb. Wheat extract
pinch of Irish moss
Hops: 4 oz. Saaz (3.75% AA, 90 min.)
3 oz. Cascade (aroma)
Yeast: Nottingham yeast, 2 packets, starter made night before pitch and beware
Log: Primary 3-4 days, secondary 4 weeks outside lagering & kegging 7-10 days
Carbonation: 2.2 volumes Keg: 18.8 psi @ 60°F
