Mr. Robinson's Christmas Ale

Dark, warm, and strong ale for cold winter months.

Bitterness: 67 IBU
OG: 1.062 FG: 1.010
Alcohol: 6.7% v/v (5.3% w/w)
Water: Boiled tap water w/ couple tsps of burton salts
Grain: 2 lb. American crystal 10L
1 lb. American chocolate
Mash: 80% efficiency
45 min.
Boil: 60 minutes SG 1.056 5.5 gallons
5.5 lb. Amber malt extract
5 oz. Brown sugar
5 oz. Honey
After boil toss in a bit of nutmeg and cinnamon for tradition's sake.
Hops: 0.95 oz. Northern Brewer (8.5% AA, 60 min.)
1.91 oz. Cascade (6% AA, 45 min.)
1 oz. Cascade (aroma)
Yeast: 1056
Log: Primary for four days, secondary for 7, bottle for at least two weeks.
Carbonation: 3/4 cup corn sugar
Tasting: Bit too much chocolate malt, actually was supposed to be .5 lb instead of a whole pound but regardless it still tastes good. Nice full palate pleasing beer.
