California Red-Head

This beer is destined to be a Superbowl Beer. It should be appreciated by most who try it. It was my intention to create a beer that has plenty of malt flavor and a clean hop bitterness.

Type: Extract w/grain Size: 5.5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 32 IBU
OG: 1.061 FG: 1.010
Alcohol: 6.5% v/v (5.1% w/w)
Water: I used 5gal distilled water and 1gal bottled drinking water in the boil. I added 1/2gal of drinking water to fill carboy. I boiled out 1.5gal in the 1hr boil.
Grain: .5 lb. Wheat malt
.5 lb. American crystal 20L
.5 lb. Dextrine malt (Cara-Pils)
Steep: Steeped grains for 30min starting at 150°F and finishing at 170°F.
Boil: 60 minutes SG 1.056 6 gallons
6 lb. Light malt extract
2 lb. Light dry malt extract
Added Irish Moss and Yeast nutrient at 15min remaining in the boil.
Hops: .75 oz. Cascade (6% AA, 60 min.)
.5 oz. Saaz (3.75% AA, 30 min.)
.5 oz. Cascade (6% AA, 15 min.)
Yeast: White Labs English Ale Yeast, WLP002, 35ml, pitchable.
Log: Brewed 12-19-00. Primary in glass carboy.
