Honey Amber Ale

18 HCU (~11 SRM)
Bitterness: 11 IBU
OG: 1.070 FG: 1.010
Alcohol: 7.7% v/v (6.1% w/w)
Water: Plain old bottled water.
Grain: .5 lb. American crystal 20L
.5 lb. American crystal 60L
.5 lb. Belgian CaraVienne
Steep: Steep grains for 30 minutes between 155° and 170°. Then discard.
Boil: 60 minutes SG 1.174 2 gallons
6.6 lb. Light malt extract
2 lb. Honey
Add 1 tsp Irish Moss with 20 minutes left to boil, if you care about clarity. If not, then leave it out.
Hops: 1 oz. Northern Brewer (7.2% AA, 60 min.)
.5 oz. Mt. Hood (4.1% AA, 30 min.)
.5 oz. Mt. Hood (4.1% AA, 15 min.)
Yeast: Since I'm using British hops I'll use a British ale yeast. Wyeast 1098. Wyeast 1338 would do as well.
