Creamy panty soup

This was my first try at mellowing my original oatmeal stout for a girlfriend and I was somewhat pleased with the final result but will still try to do better next time.

Type: All grain Size: 11 gallons
Color:
62 HCU (~25 SRM)
Bitterness: 30 IBU
OG: 1.060 FG: 1.016
Alcohol: 5.6% v/v (4.4% w/w)
Grain: 16 lb. American 2-row
1 lb. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
1 lb. American chocolate
8 oz. Roasted barley
4 lb. Flaked oats
Mash: 80% efficiency
Protein rest at 135 degree F. for 30 minutes. Step mash at 150 degree F. for 50 min. Final temp of 168 degree F. for 5 min.
Boil: 60 minutes SG 1.055 12 gallons
1/2 teaspoon irish moss last 10 min of boil
Hops: 4 oz. Willamette (5% AA, 60 min.)
Yeast: Safale yeast / 2 packets pitched at 105 degree F. in 2 cups water
Log: Brewed 2/20/05. Fermented 10 days at 70 degree F. total darkness maintained. Bottled 103 12oz bottles 3/2/05 using 1 and 1/2 cup
corn sugar to 4 cups water to prime bottles.
Carbonation: Bottles primed with 1.5 cups corn sugar to 4 cups water.
Tasting: Its a little less bitter than what I prefer but when you brew a batch for a girlfriend, thats what happens (she likes it smooth)
Next time more bittering hops or different type and a bit more
chocolate malt and crystal malt.
