Bitterness: 53 IBU
OG: 1.054 FG: 1.015
Alcohol: 5.1% v/v (4.0% w/w)
Water: City municipal water "soft".
3 Tbs. into initial 15 gallons of hot liquior.
Grain: 14 lb. 8 oz. American 2-row
5 lb. Wheat malt
2 lb. 8 oz. American crystal 90L
1 lb. 4 oz. American black patent
1 lb. 4 oz. Roasted barley
1 lb. 8 oz. Rolled oats
1 lb. 8 oz. Grape Nuts flakes
Mash: 70% efficiency
8 gallons 173°F into mash tun, mash in grains, stir and stabilize at 153°F for 60 minutes. Top hot liquior tank to 9 or 10 gallons at 185°F. Sparge to collect 14 to 15 gallons wort, approximately 60 minutes.
Boil: 65 minutes SG 1.047 14.5 gallons
Irish Moss 15 minutes
Hops: 6 oz. Fuggles (5.3% AA, 60 min.)
2 oz. Fuggles (5.3% AA, 15 min.)
2 oz. Kent Goldings (aroma)
Yeast: Diamond Knot Brewery "Wyeast 1028", 3 cups slurry

1/19/02 Secondary
Carbonation: Force carbonate CO2 30 PSI two days, dispense at 9-10 PSI
