We brew this in the summer to be ready for the cold NY winters. It is a good one to let age.. if you can keep your hands off it long enough.

Type: All grain Size: 5 gallons
Color:
252 HCU
Bitterness: 73 IBU
OG: 1.114 FG: 1.035
Alcohol: 10.1% v/v (8.0% w/w)
Grain: 18 lb. British pale
.5 lb. Weyermann Smoked Malt
.5 lb. American victory
.5 lb. Dextrine malt (Cara-Pils)
.5 lb. Cara-Aroma
.5 lb. British crystal 135
1.19 lb. British chocolate
1 lb. Roasted barley
2 lb. Flaked oats
Mash: 63% efficiency
Water to grain ratio is 1.5 quarts/pound. I would suggest using 2qts/pound for increased efficiency.
Mashed at 155 for 2 hours
Boil: 120 minutes SG 1.063 9 gallons
Recipe configured for 9 gallon runoff. Run 7 gallons into your main boil kettle with hop additions. Run an additional 2 gallons into a separate kettle and boil separately withOUT hop additions. Boil boils should be for 2 hour length, and then combined for cooling.
Hops: .25 oz. Simcoe (14% AA, 90 min.)
1 oz. Phoenix (10.% AA, 60 min.)
.5 oz. Perle (8.8% AA, 30 min.)
2 oz. Fuggles (4.75% AA, 20 min.)
1.5 oz. Fuggles (aroma)
Yeast: WYeast 1084 with about a gallon sized starter
Log: Brewed 7/11/2009
racked to secondary on 9/13/09. SG was 1.036,black viscous and smooth
Bottled 1/09/2010 with FG = 1.035.
Carbonation: bottled with 2.1oz dextrose, which should have provided 1.88 vols CO2 *see tasting notes*
Tasting: I wish I could keep my hands off this beer. At 10%+, it drinks more like a dry stout. It is very easy to down more than one without realizing how strong it is.
This beer never really carbonated. It does not need it, as it stands on it's own flavor and aroma merits. If you are hung up on such things, add yeast at bottling time or force-carb. This would be sexy-awesome on a Nitro system
