Crazy Monk Stout

We all know who the crazy monk is.
This is designed to be a clone of the old dude.
Just keep him away from the woman and children.

Alcohol: 8.7% v/v (6.9% w/w)
Water: 1/3 San Jose Tap. The rest is distilled.
Grain: 14 lb. American 2-row
1 lb. American victory
2.5 lb. British brown
1.5 lb. British crystal 95-115L
1.25 lb. British chocolate
1 lb. Roasted barley
Mash: 65% efficiency
Single step infusion @ 155° Collect About 5.5 Gal. Add water to bring to 8 Gal.
Boil: 100 minutes SG 1.061 8 gallons
Hops: .5 oz. Centennial (10.5% AA, 90 min.)
1 oz. Chinook (12% AA, 90 min.)
2 oz. Cascade (5% AA, 30 min.)
.5 oz. Centennial (aroma)
Yeast: American Ale
Carbonation: 2.5 vol. 17lbs. @ 50°
Tasting: Brewed on 11/10 Keged on 12/15. Tastes great, Coffee, Chocolate,
Licorice. Very complex, and very smooth. A great sipping beer for Christmas.
