Alcohol: 7.6% v/v (6.0% w/w)
Water: Add 1tbsp gypsum
Grain: 0.25 lb. Wheat malt
1 lb. German Munich
0.5 lb. American crystal 90L
0.5 lb. British chocolate
0.5 lb. British black patent
0.5 lb. Roasted barley
Steep: Place grains in grain bag and steep at 160°F for 45 minutes in 2.5 Gallons of water.
Sparge (do not squeeze) with 0.5 Gal water at 170°F.
Boil: 60 minutes SG 1.140 3 gallons
8 lb. Dark dry malt extract
0.5 lb. Molasses
Bring to a boil and add DDME.
Add 1tsp Irish Moss last 10 minutes of boil.
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 45 min.)
1 oz. Cascade (6% AA, 30 min.)
0.5 oz. Kent Goldings (5% AA, 30 min.)
0.5 oz. Kent Goldings (aroma)
Yeast: Wyeast 1272; American Ale Yeast II
Log: Primary fermentation 6 days at 60°F
Secondary fermentation 8 days at 62°F
Tertiary (bottle conditioning) 2-3 weeks at 65°F
Carbonation: 2.0 volumes Corn Sugar: 3.06 oz. for 5 gallons @ 68°F
Dissolve sugar into 1 pint of strong coffee or espresso, cover and cool to room temperature and add to secondary. Gently swirl and allow to settle. Bottle.
