Color:
81 HCU (~30 SRM)
Bitterness: 68 IBU
OG: 1.082 FG: 1.025
Alcohol: 7.4% v/v (5.8% w/w)
Water: Add a teaspoon or so of gypsum if you like.
Grain: 1 lb. American 2-row
1 lb. American Crystal 90L
0.5 lb. Roasted Barley
Steep: Steep grains for the typical 45 minutes @ 155° F.
Boil: 60 minutes SG 1.082 5 gallons
9 lb. Light LME
1 lb. Light DME
Add 0.5 oz Licorice Root with 30 minutes left in the boil.
Add 2 oz Unsweetened Baker's Chocolate with 20 minutes left in the boil.
Add 1 teaspoon of flaked Irish Moss the last 15 minutes of the boil.
Hops: 1 oz. Columbus (15% AA, 60 min.)
1 oz. Challenger (7% AA, 45 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast #1084 Irish - Starter Recommended
Champagne Yeast in Secondary - 1 pack
Carbonation: Bottle using corn sugar or force carbonate in a keg.
