Water: Dublin's water profile: 10 gallons of 80% filtered Kearney, NE city water and 20% RO with 0.5 oz. CaCl2 added.
Grain: 12 lb. 8 oz. British pale
1 lb. 8 oz. British crystal 70-80L
1 lb. 8 oz. Roasted barley
1 lb. Flaked barley
Mash: 70% efficiency
Strike with 6 gallons of ___° water. Rest for 1 hour at 153°. Sparge 3 gallons of ___° water.
Boil: 60 minutes SG 1.085 6 gallons
1 lb. Honey
1 lb. Brown sugar
Add 1/2 tsp. Irish Moss with 15 minutes left.
Hops: 2 oz. Cascade (5.4% AA, 60 min.)
3 oz. Cascade (5.4% AA, 30 min.)
0.5 oz. Cascade (5.4% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast 1056 obtained from Thunderhead Brewing fermenter. Stepped up 12 hours before pitching.
Log: Brew Date: Wednesday, July 26, 2000. Racked to secondary ~10 days later. Cold conditioned in secondary at 38°.
Bottled: Thursday, November 16, 2000 using counterpressure filler.
