NightStalker (based on Goose Island's Nightstalker)

This is a first attempt at cloning Goose Island Night Stalker Ale
According to the Goose Island website, they use Mt Hood hops - but the brew supply shop didn't have it, so I substituted Hallertau for bittering and Hersbrucker for aroma

Boil: 60 minutes SG 1.087 6.5 gallons
0 lb. Light dry malt extract
3.3 lb. Light malt extract
Hops: 1.59 oz. Simcoe (12.7% AA, 60 min.)
1 oz. Hallertau (4.1% AA, 30 min.)
1 oz. Hallertau (aroma)
2 oz. Hersbrucker (aroma)
Yeast: 1728 Scottish Ale Yeast
Log: Starting Gravity : 1.114
Final Gravity : 1.026
Tasting: After aging about 18 months, this was a VERY good beer.
