Maxed Out (Mac's Stout)

My first attempt at a Guinness Stout clone! I think it turned out great!!

Beer: Maxed Out (Mac's Stout) Style: Irish Dry Stout
Type: Extract w/grain Size: 5 gallons
Color:
125 HCU (~41 SRM)
Bitterness: 22 IBU
OG: 1.040 FG: 1.013
Alcohol: 3.5% v/v (2.8% w/w)
Grain: 6 oz. British crystal 50-60L
4 oz. Belgian chocolate
10 oz. Roasted barley
1 lb. Flaked barley
Steep: Steep grains in 2.5gals of cold water, bring up to 150° and hold for 30 minutes. Sparge with .5gals of 170° water.
Boil: 60 minutes SG 1.081 2.5 gallons
3 lb. 8 oz. Dark malt extract
1 lb. Amber dry malt extract
Bring to boil and add LME & DME and the No. Brewer. Special ingredient -- 1 week before brewing pour a 21oz. bottle of Guinness Extra Stout into a bowl and cover it with wax paper, the beer will sour during the week, which is what you want (it's what Guinness does, I also heard they have fish heads in this concoction, but I didn't want to go that far!)Add this at the beginning of the boil. Add 1tsp. of Irish Moss at 15min and the Fuggles at 5 min.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
.5 oz. Fuggles (aroma)
Yeast: White Labs Irish Ale yeast WP004
Log: Brewed on 9/2. Secondary on 9/14. Bottled on 9/23.
Carbonation: Used 1 1/4C of light DME for the carbonation.
Tasting: Good on Halloween. Great at Thanksgiving. Did a side by side comparison with the Real Guinness Extra Stout and only one person out of six could name the real one!! My best attempt at homebrew out of seven different types that I have done in the past year, all good ones I might say!
