Snowshoe Stout

This is a variation on a stout I took to Snowshoe last winter. I was
out of some of the grains I used in the original recipe.

Type: All grain Size: 9.5 gallons
Color:
55 HCU (~23 SRM)
Bitterness: 31 IBU
OG: 1.048 FG: 1.010
Alcohol: 5.0% v/v (3.9% w/w)
Grain: 12 lb. American 2-row
8 oz. American victory
8 oz. American crystal 10L
4 lb. Dextrine malt (Cara-Pils)
3 oz. American chocolate
3 oz. American black patent
10 oz. Roasted barley
Mash: 72% efficiency
Doughed in with 12 qts of water, then added boiling. Missed temp. Too low. Ended up doing one decoction to get to 150 degrees.
Boil: 60 minutes SG 1.038 12 gallons
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
1 oz. Cluster (7% AA, 45 min.)
Yeast: Wyeast Dry Irish Ale in a starter
Log: Had a full head of krausen after 12 hours. Primary fermentation lasted three days.
