Type: Extract w/grain Size: 19 liters

Bitterness: 21 IBU
OG: 1.044 FG: 1.020
Alcohol: 3.1% v/v (2.4% w/w)
Water: Add 8 tsp Gypsum
Grain: 0.92kg American Crystal 60L
0.55kg American Black Patent
0.55kg Roasted barley
Steep: Steep grains, removing 5 min into the boil.
Boil: 60 minutes SG 1.076 11 liters
1.67kg Extra Dark dry malt extract
11.0kg John Bull Irish Stout
Add 1 Tsp Irish Moss (last 15 min of boil)
Hops: 1.0 oz. Cluster (7% AA, 60 min.)
Yeast: 1 liter Pure Cranberry Juice (not Cranberry Juice Cocktail) added just prior to pitching.

10g Danstar Windsor Ale Yeast
Log: O.G. 1044 @ 60°
Transfer to secondary at S.G. 1021, Add 1 liter Cranberry Juice (Approx 5-7 days)
Racked/Bottled @ 15 days
Carbonation: Add 1 Liter Cranberry Juice to racking container immediately prior to transfering from secondary to racking container.
Tasting: The initial addition of cranberry juice provides background flavor that is subtle. The second addition of cranberry juice provide aroma and tartness that comes through on the pour and first taste. The cranberry juice also gives the head a pinkish hue. The light hopping help the cranberry notes come forward and combined with the flavor profile of the Irish Stout.
