The Black Stuff

I found this recipe in a Guinness FAQ. Its pretty close for those of you who like a good stout. It is closer to the bottled guinness extra than to the pub version.

Beer: The Black Stuff Style: Irish Dry Stout
Type: All grain Size: 17 gallons
Color:
154 HCU (~47 SRM)
Bitterness: 39 IBU
OG: 1.057 FG: 1.015
Alcohol: 5.4% v/v (4.3% w/w)
Water: Used poland springs bottled water
Grain: 22 lb. American 2-row
1 lb. American black patent
3 lb. Roasted barley
9 lb. Flaked barley
Mash: 80% efficiency
Single step infusion mash at 150° for 90 minutes, with a quarter tsp. of amylase enzyme.
Boil: 60 minutes SG 1.065 15 gallons
Hops: 2 oz. Chinook (12.2% AA, 60 min.)
2 oz. Chinook (12.2% AA, 40 min.)
1 oz. Kent Goldings (5.5% AA, 20 min.)
Yeast: Wyeast #1084 Irish Ale
Log: Primary for 7 days, dropped trub and let sit in secondary for 20 days. Bottled with 1.5 cups corn sugar and let sit for 25 days.
Carbonation: 1.8 volumes Corn Sugar: 8.81 oz. for 17 gallons @ 70°F
Tasting: PRETTY CLOSE TO THE REAL BLACK STUFF. fOR A NICE MILK STOUT ONE MIGHT DROP A LITTLE OF THE CHINOOK AND ADD SOME LACTOSE WHEN BOTTLING
