STOUT ENOUGH! - 2009

This ale should be stout enough for anyone.

Type: All grain Size: 24 liters
Color:
142 HCU (~45 SRM)
Bitterness: 51 IBU
OG: 1.065 FG: 1.016
Alcohol: 6.3% v/v (5.0% w/w)
Water: Soft filtered tap water, pH adjustment to 5.2 with Five Star 5.2 pH stabilizer.
Grain: 8 lb. British pale (Maris Otter)
1 lb. Oatmeal (cheap Walmart store brand)
8 oz. Victory malt (Briess)
8 oz. Crystal malt 60L (Briess)
12 oz. Roasted barley (Fawcett)
12 oz. Black malt (Briess)
1 lb. Powdered malt (not DME)
1 lb. Flaked barley (Briess)
Mash: 81% efficiency
The oats and flaked barley were boiled and left overnight. The next day the temperature of this gruel was raised to 150°F and the powdered malt added to start conversion, while waiting for the main mash water to heat up. The main mash was a simple infusion, at 150°F for 90 minutes. When the mash water reached 150°F, grain was added and then the oat/barley gruel was added. Heat from a hotplate raised and kept temperature at 150°F.
Boil: 90 minutes SG 1.056 27.7 liters
0.5 lb. Honey
1 oz. Molasses
Boil started on a hotplate used to add heat to the runoff; FWH. The runoff started to boil, which added about 30 minutes of boil time. Also added at this time was 3 teaspoons of yeast nutrient, a teaspoon of marmite, the honey and the molasses.

Actual boil on the stove was 60 minutes, with lid of pot minutely cracked. Irish moss added with last quota of hops, at 10 minutes left in boil.
Hops: 57g Northern Brewer (7% AA, 90 min.)
14g East Kent Goldings (5.3% AA, 30 min.)
14g East Kent Goldings (5.3% AA, 10 min.)
Yeast: Two-quart starter of Nottingham yeast.
Log: Wort was chilled to 78°F with an immersion-chiller, then siphoned into a carboy which was shaken to aerate. Fermented at 63±2°F.

Started 22 Nov 2009, siphoned 30 Nov 2009, bottled 21 Dec 2009.
Carbonation: 1.8 volumes Cane Sugar: 68.0g for 20 liters @ 68°F
Tasting: A very nice dry stout. Loads of body, enough alcohol so you might ony want one. A meal in a glass.
