Schuylkill Stout

A Guinness clone effort, based on Papazian's Toad Spit Stout. Don't forget the 20oz Guinness (or previous batch of this stuff), opened and allowed to sour (loosely covered with tinfoil) for a week before adding to the boil. Tang!

Bitterness: 40 IBU
OG: 1.064 FG: 1.020
Alcohol: 5.7% v/v (4.5% w/w)
Water: Straight Schuylkill River tap.
Grain: 12 oz. British crystal 70-80L
5 oz. British black patent
5 oz. Roasted barley
Steep: All crushed grains > 1.5gal water > 155°F for 30min
Sparge ('cause I got one) > brew kettle
Boil: 60 minutes SG 1.128 2.5 gallons
3.3 lb. Dark malt extract
4 lb. Dark dry malt extract
1/2tsp Irish Moss @ 10min remaining
Hops: 2 oz. Cascade (5.9% AA, 60 min.)
1.5 oz. Cascade (5.9% AA, 45 min.)
0.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Safale S-04 pitched dry @ 80°F, 10min sit, then well shaken
