Bitterness: 33 IBU
OG: 1.062 FG: 1.016
Alcohol: 5.9% v/v (4.6% w/w)
Water: 1/2 Tsp Gypsum
Grain: 1/2 lb. British crystal 70-80L
1/3 lb. American chocolate
1/3 lb. Roasted barley
1/4 lb. Smoked barley
Steep: Add grain to 1.5 gal water and bring to 170°. Turn of heat.
Steep 30 minutes. Sparge with up to 1 gallon water.
Boil: 60 minutes SG 1.113 3 gallons
2 lb. Light malt extract
6 lb. Dark malt extract
1/2 lb. Brown sugar
Add up to 2 oz. malto-dextrin.
Add a pinch Irish Moss
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 30 min.)
1 1/2 oz. Kent Goldings (5% AA, 15 min.)
1/2 oz. Kent Goldings (aroma)
Yeast: Irish liquid Ale Yeast w/Pitch.
