Black Velvet (Murphys clone)

This is supposed to be a Murphy's clone, however I doubt I ever will get it that good...

119 HCU (~40 SRM)
Bitterness: 31 IBU
OG: 1.045 FG: 1.010
Alcohol: 4.5% v/v (3.5% w/w)
Water: 3 ml gypsum in the lautering water.
Grain: 2470g British pale
100g Dextrine malt (Cara-Pils)
100g British chocolate
350g Roasted barley
100g Flaked barley
Mash: 75% efficiency
Single step infusion at 66°C for 90 minutes. 3 l water/kg malt
Lautered at 75°C to 17 liters
Boil: 90 minutes SG 1.042 17.0 liters
Irish moss the last 15 minutes.
Hops: 28g Tettnanger (5% AA, 60 min.)
14g Tettnanger (5% AA, 30 min.)
7g Tettnanger (5% AA, 5 min.)
Yeast: Ale yeast of own blended strain, but I usually get a good flavor of it.
