Bitterness: 20 IBU
OG: 1.045 FG: 1.010
Alcohol: 4.6% v/v (3.6% w/w)
Water: 1 TBS 5.2 stabilizer, 1 tsp gypsum
Grain: 4 lb. 8 oz. American 2-row
3 lb. American 6-row
8 oz. Hickory Smoked 2-row
3 oz. British chocolate
10 oz. British black patent
Mash: 80% efficiency
153F for 60 min. 1 gal decoction to mash out at 160 for 10 min. Fly sparge with 170F to collect 7.5 gal.
Boil: 60 minutes SG 1.033 7.5 gallons
Hops: .5 oz. Fuggles (4.2% AA, 60 min.)
.5 oz. Kent Goldings (4.5% AA, 30 min.)
.5 oz. Fuggles (4.2% AA, 15 min.)
.5 oz. Kent Goldings (aroma)
Yeast: White Labs 001 from previous brew.
Log: Add 8 oz pure maple syrup at kegging, or add to bottling bucket at priming sugar.
Carbonation: keg and force carbonate
