Hillybilly Porter

Using traditional English hops, and a little more malt extract for
that "kick" us Ozark Mountain Hillbillies enjoy.

Type: Extract w/grain Size: 5 gallons
Color:
67 HCU (~27 SRM)
Bitterness: 18 IBU
OG: 1.075 FG: 1.012
Alcohol: 8.2% v/v (6.4% w/w)
Water: Only the purest bottled Ozark Mountain Spring Water
Grain: .5 lb. American crystal 90L
.5 lb. Dextrine malt (Cara-Pils)
.25 lb. American chocolate
Steep: Steep the specialty grains to 170 ° F then remove
Boil: 60 minutes SG 1.125 3 gallons
8 lb. Amber dry malt extract
1 tsp Irish Moss
Hops: 2 oz. Fuggles (4.75% AA, 60 min.)
2 oz. Kent Goldings (aroma)
Yeast: High quality SAF s40 dry ale yeast
Log: Seven days in the primary, seven days in the secondary and 7-14 days
in the bottle
Carbonation: 3/4 cup corn sugar at time of bottling
