2 lb. Beechwood Smoked Malt
8 oz. American crystal 40L
1 lb. American crystal 80L
8 oz. Belgian Special B
4 oz. American chocolate
1 lb. Belgian chocolate
8 oz. Torrified Wheat
Mash: 75% efficiency
Strike temp 163 ° with 7 gallons hot liquer. Hold @ 152 ° for 70 mins.
Add 2.5 gallons boiling water to mash out @ 167 ° hold for 10 mins. Sparge to collect 13 gallons
Boil: 70 minutes SG 1.043 13 gallons
irish Moss last 20 mins.
Hops: 1 oz. Target (8.8% AA, 60 min.)
1 oz. Progress (6.3% AA, 30 min.)
1 oz. Progress (6.3% AA, 15 min.)
Yeast: Split int two batches 5.5 gallons each. In #1 pitched wyeast 1087 vial. In #2 wyeast 1099 XL Smack pack
Log: Date Brewed 3/12/99 Fermented both @ 68 ° in primary for 6 days and racked to sec.
