Christmas Ale 2006

MCBA offers two versions of Christmas Ales this holiday season. The traditional North Pole Porter and a cherry porter aptly named South Pole Porter.

Type: All grain Size: 10 gallons
Color:
95 HCU (~34 SRM)
Bitterness: 33 IBU
OG: 1.058 FG: 1.014
Alcohol: 5.7% v/v (4.5% w/w)
Water: Used PH stablizer 5.2 to treat water.
Grain: 19 lb. British pale
8 oz. British chocolate
8 oz. British black patent
8 oz. Flaked oats
8 oz. Coffee
1 lb. 8 oz. Crystal 120
Mash: 70% efficiency
Mash grains at 154° for 75 mins.
Boil: 60 minutes SG 1.053 11 gallons
Added 3 licorice sticks to start of boil, Irish Moss and yeast nutrient at 15 min left in boil.
Hops: 1 oz. Challenger (6.9% AA, 60 min.)
1 oz. Target (10.4% AA, 30 min.)
1 oz. Progress (6% AA, 15 min.)
3 oz. Kent Goldings (aroma)
Yeast: White Labs WL023 Burton Ale, 2 vials
Log: Brewed on 10/30/06. Cherry extract will be added to 5gallons at bottling time.
Tasting: Both are very drinkable ales, and are well balanced. Nice job Dave.
