Alcohol: 5.7% v/v (4.5% w/w)
Grain: 2 lb. 8 oz. American 2-row
4 oz. American Munich
12 oz. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
12 oz. American chocolate
8 oz. American black patent
Mash: 60% efficiency
heat water to 169 (11 above target) and add grain. steep for 30 minutes. recirc first .5 gallon. then add sweet wort to brew pot. add 1.6 gallons of sparge water adn wait 5 minutes. run off sparge and add to brew pot
Boil: 60 minutes SG 1.089 3.5 gallons
3 lb. Light dry malt extract
2 lb. 5 oz. Maple syrup
add irish moss with 15 minutes left of the boil. boil bag of lme and malto dextrine.
Hops: 1 oz. Northern Brewer (6.5% AA, 60 min.)
1 oz. Fuggles (4.2% AA, 15 min.)
Yeast: burtons ale yeast white labs
Log: add maple syrup (pasteurized) to fermentor
Carbonation: 3/4- 7/8 cup of corn sugar, maybe add syrup instead
