Grain: 3 lb. American 2-row
5 lb. German Vienna
8 oz. Belgian Special B
1 lb. British crystal 70-80L
8 oz. American chocolate
8 oz. American black patent
2 lb. Flaked rice
Mash: 80% efficiency
Single infusion mash,hold at 153 deg. for 90 min. Then sparge as normal.
Boil: 60 minutes SG 1.060 6 gallons
Added 5 Lb. of fresh blackberries at 45 min left in the boil.
Hops: 1 oz. Chinook (12% AA, 60 min.)
1 oz. Fuggles (3.3% AA, 30 min.)
1 oz. Tettnanger (3.5% AA, 15 min.)
Yeast: windsor (canadian) no starter, just rehydrated prior to pitch.
Log: One week in the primary, two weeks in the secondary. Bottle conditioned for three weeks.
Carbonation: 3/4 cup of corn sugar.
Tasting: Far exceeded my expectations. A verry different tasting fruit beer.
