Listing to Porter

This is the third attempt at a really rich, creamy, dark porter. This
beer is very smooth and mellow, and shows that roasted barley should be
left to the stouts.

Type: All grain Size: 10 gallons
Color:
85 HCU (~31 SRM)
Bitterness: 30 IBU
OG: 1.063 FG: 1.015
Alcohol: 6.3% v/v (4.9% w/w)
Water: 2 ml lactic acid (88%) added to sparge water.
Grain: 16 lb. British pale
2 lb. American Munich
1 lb. Belgian CaraVienne
1 lb. Belgian Special B
1.5 lb. American chocolate
1 lb. Flaked barley
Mash: 78% efficiency
Mash in at 156F. Hold for 60 minutes. Liquid decoct 4 litres and
boil, add back to the mash to hit mash-out of 168F.
Boil: 75 minutes SG 1.058 11 gallons
1 tsp irish moss added at 10 min.
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
.75 oz. Galena (13% AA, 60 min.)
Yeast: WY 1007 (German Ale), yeast cake from previous batch (1 carboy)
Nottingham dry yeast (2 packs) (1 carboy)
