Litch's Extra Hoppy Holiday Porter II

This is the second brew of Litch's Hoppy Holidays Porter. The adjustments this batch is slightly increasing the amount of hops and switching when the hops are added. This will increase the IBU's from 66 to 82.

Water: Great Portland Water with a couple of teaspoons of gypsum.

Grain: 9 lb. American 2-row
1 lb. German Munich
8 oz. American crystal 90L
8 oz. American chocolate
4 oz. American black patent
Mash: 82% efficiency
Initial hot water tank temp of 185 degrees to acheive a 154 degree mash temp. Before sparging increased the mash temp to 168.
Boil: 90 minutes SG 1.051 6.5 gallons
Added a teaspoon of Irish Moss to the last 15 minutes of the boil
Hops: 1.0 oz. German Northern Brewer (9.7% AA, 60 min.)
.5 oz. Chinook (14.0% AA, 30 min.)
.75 oz. German Northern Brewer (9.7% AA, 30 min.)
1.0 oz. Chinook (14.0% AA, 15 min.)
Yeast: White Labs Irish Ale Yeast # 004 Exp date 2/5/12

Settle 2 weeks 12/2-12/16
Carbonate 2 days 12/17-12/19
Post Carbonation rest 2 days 12/20-12/22
