OG: 1.085 FG: 1.020
Alcohol: 8.4% v/v (6.6% w/w)
Water: 1 tsp gypsum
Grain: 16 lb. 0 oz. Golden Promise 2-row
0 lb. 4 oz. Peated malt
0 lb. 4 oz. Roasted barley
Mash: 70% efficiency
Boil: 60 minutes SG 1.170 2.5 gallons
remove 1 gal of wort from boil and boil in separate pot to reduce to 1/4 gallon for caramelization to add to flavor and body
Hops: 1.5 oz. Kent Goldings (4.75% AA, 60 min.)
1.5 oz. Kent Goldings (4.75% AA, 30 min.)
Yeast: Wyeast 1272 American (alternately, delete peated malt and use Wyeast 1728 Scottish Ale)
Log: This began as a straight TH clone attempt, but I pumped up the gravity a bit . . .
Carbonation: target 3.5 vol CO2
