55 HCU (~23 SRM)
Bitterness: 6 IBU
OG: 1.094 FG: 1.020
Alcohol: 9.6% v/v (7.5% w/w)
Grain: 6 oz. British crystal 50-60L
1 lb. British crystal 95-115L
4 oz. British chocolate
Steep: Steep grains in muslin bag at 155° for 60 minutes.
Boil: 60 minutes SG 1.236 2 gallons
9 lb. 0 oz. Light dry malt extract
1 lb. 0 oz. Brown sugar
Be careful when bringing to a boil. With this much sugar it is EASY to boil over. 1 tsp Irish Moss last 15 minutes of boil.
Hops: 1.0 oz. Fuggles (5.1% AA, 60 min.)
0.50 oz. Kent Goldings (5.6% AA, 45 min.)
0.50 oz. Kent Goldings (5.6% AA, 15 min.)
Yeast: White Labs Edinburgh Ale (WLP028) in a starter (8 oz extra light DME and 1 quart water) started 2 days prior to brewing.
