Bitterness: 25 IBU
OG: 1.090 FG: 1.020
Alcohol: 9.1% v/v (7.1% w/w)
Water: All water run through Charcoal filter (Brita)
Grain: 10 lb. British pale
1 lb. 8 oz. American victory
1 lb. American crystal 60L
1 lb. Dextrine malt (Cara-Pils)
1 lb. Belgian CaraMunich
4 oz. British crystal 70-80L
1 oz. American black patent
Mash: 75% efficiency
2 Temp. infusion
Dough in at 135 degrees for 30 mins.
Mash at 155 degrees for 60 mins.

Sparge with 170 degree filtered water.
Boil: 120 minutes SG 1.065 7 gallons
1 lb. Belgian Candi Sugar (Amber)
Caramelize first 2 quarts of sparge runoff (after recirculation) by boiling on the stove and reducing by half. Add into boil. Boil for 120 minutes.
Hops: 1.75 oz. Kent Goldings (5% AA, 45 min.)
.5 oz. Fuggles (4.75% AA, 15 min.)
Yeast: White Labs High Gravity Ale. >80% Attenuation. Medium Flocculation. Fermentation Temp. 65-69 degrees.
