Type: Partial mash Size: 5 gallons
Color:
70 HCU (~28 SRM)
Bitterness: 16 IBU
OG: 1.085 FG: 1.021
Alcohol: 8.3% v/v (6.5% w/w)
Water: gypsum, calcium carbonate added to Pure Drinking Water
Grain: 3.75 lb. American 2-row(1/4lbs toasted)
.25 lb. Wheat malt
.75 lb. American crystal 60L
.25 lb. American black patent
.25 lb. Roasted barley
Mash: 70% efficiency
two step infusion
Strike in at 156 and hold for 1 hour
mash out at 162 for 10 minutes
Boil: 75 minutes SG 1.122 3.5 gallons
8 lb. Light malt extract
add irish moss last 10 minutes
Hops: 1 oz. Fuggles (4.75% AA, 75 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
Yeast: brittish ale yeast(white lab pitchable, 1 1/2 tubes)
Log: primary fermentation for 3 weeks at 65
secondary fermentation for 1 week at 65
Cold condition in bottles at 35 for 6 weeks to one year.
Carbonation: force carbonation.
Tasting: Tasted at racking time and was blown away completely. I have never brewed anything that was this good this soon!! I think this one will be another blue ribbon beer for the Head. Very smooth. Maltiness is perfectly balanced, not a lot of hop flavor(which was the plan). Head size and retention are outstanding. Finishes well and leaves us wanting more. The only thing that was not idea was the conditioning time in the keg. Our carbonation was a little weak, but what the hell the beer is still fantastic....It's not Crap!! It must be Scottish!!!
