Fat Bastard's "Get in me belly!" Scottish Ale

I've had a craving for a good Scottish Ale lately so i decided to brew one for my next batch. As chance would have it I was watching Austin Powers when I decided to brew this beer, hence the name.

Type: All grain Size: 5.5 gallons
Color:
43 HCU (~20 SRM)
Bitterness: 30 IBU
OG: 1.077 FG: 1.020
Alcohol: 7.4% v/v (5.8% w/w)
Water: Carbon filtered tap water with a small addition of gypsum as my water is somewhat soft.
Grain: 11 lb. 8 oz. British pale
12 oz. Wheat malt
1 lb. German Munich
8 oz. British crystal 135-165L
4 oz. British chocolate
4 oz. Peat Smoked Malt
Mash: 79% efficiency
Doughed in 14.25 pounds of malt to 4.6 gallons of 170° strike water in my 48qt. converted cooler. Stablized at 154-155° and let rest for 2 hours. Drained first runnings and then batch sparged with 176° water for a 163° mashout. Collected 8 gallons of runoff into kettle.
Boil: 90 minutes SG 1.053 8 gallons
Boiled in 15.5 gallon coverted Sankey keg. Added hops (in muslin bag) after 20 minutes of boil to hot break had cleared. Boiled 90 minutes and then added Irish Moss for the last 30 minutes. Cooled with immersion chiller for 25 minutes down to 73° and transfered to fermenter.
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 60 min.)
Yeast: Stepped up a smack pack of Wyeast 1098 in a quart starter of 1.040 wort made from light DME. Pitched into 70° wort.
