Mighty Old Ale

An attempt to make a style comparable to Old Peculier, just kicked up
a notch.

71 HCU (~28 SRM)
Bitterness: 28 IBU
OG: 1.079 FG: 1.015
Alcohol: 8.2% v/v (6.4% w/w)
Water: None
Grain: 1 lb. Belgian CaraMunich
1/4 lb. British chocolate
1/4 lb. Belgian Special B
Steep: Steep grains in water at 165°F for 30 minutes. Remove grains, stir
in extract and molasses, and bring up to boil.
Boil: 60 minutes SG 1.066 6.0 gallons
7.5 lb. Light malt extract
1.5 lb. Dark malt extract
1 lb. 2 oz. Molasses - Grandma Moses Pale
Irish moss at 30 minutes.
Hops: 1 oz. Fuggles (5.5% AA, 60 min.)
1 oz. Willamette (4.0% AA, 45 min.)
Yeast: WYeast 1272 - Popped bag 3 days before pitching.
Made a starter 1 day later, in a 22 oz bottle with a 4 tablespoons of
DME, boiled in a cup and a half of water.
Log: Brewed 7/4/99
Carbonation: 3/4 cup corn sugar in enough boiled water to dissolve.
