Old Thumper

A potent Old Ale, brewed for my best friend Laura (aka Thumper) on her 33d birthday.

Beer: Old Thumper Style: English Old/Strong Ale
Type: Extract w/grain Size: 5 gallons
Color:
54 HCU (~23 SRM)
Bitterness: 34 IBU
OG: 1.080 FG: 1.020
Alcohol: 7.7% v/v (6.0% w/w)
Water: Filtered tap water for the boil, bottled water to top off the cooled wort.
Grain: 1 lb. American crystal 40L
.5 lb. Belgian CaraMunich
.25 lb. Belgian Special B
.25 lb. American chocolate
Steep: Add the whole grains to cold water, bring to a boil, shut off the heat and steep for 15 minutes. Strain out the grains and sparge with 2 quarts of hot water.
Boil: 60 minutes SG 1.159 2.5 gallons
7.5 lb. Light dry malt extract
15 oz. Molasses
1/2 tsp. Irish Moss during the last 15 minutes of boiling.
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
2 oz. Willamette (5% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 45 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Willamette (aroma)
Yeast: White Labs Pitchable liquid yeast
Burton Ale Yeast, #WLP023
Log: Transfer to a secondary container and clarify for 1-2 weeks before bottling.
Carbonation: 1/2 cup corn sugar
Tasting: Smells like an old shoe when you're brewing it, but it sure tastes good!!
